Breakfast On The Go - Overnight Oats Recipe

I discovered overnight oats about a year ago and I’ve been hooked ever since. It's a quick and easy breakfast that allows you to plan ahead. As a new mom, overnight oats are great for me. In the morning I just go to the fridge, grab a mason jar, and eat while taking care of the baby; multi-tasking at its best! They’re also great for grabbing on your way out the door on your way to work.

Ingredients:

  • 1/4 cup Blueberries

  • 1/2 Banana sliced

  • 3/4 cup Almond milk, unsweetened

  • 1/2 cup Oats

  • 10 drops Liquid Stevia

  • 1/2 tsp Vanilla extract

  • 1 tbsp Chia seeds

Directions:

  1. Mix oats and chia seeds in a mason jar or container of your choice. I like mason jars because they’re easy to top and store in the refrigerator for the week. They’re also just as easy to grab in the morning and go.

  2. Add in the almond milk, then Stevia, and vanilla extract. Lightly stir to mix evenly.

  3. Lastly, add in your fruit.

  4. Store in the refrigerator overnight or a minimum of 3 hours.

  5. Eat and enjoy!
